Chipotle Pork Fajitas

SERVES: 4 | PREP: 20 mins | COOK: 20–25 mins



8–12 flour tortillas

1 tbsp ground chipotle chilli

2 tsp soft light brown sugar

1 tsp salt

1 tsp ground cumin

1 tsp dried oregano

. tsp garlic powder

1 pork fillet 

2 bacon rashers

1 onion

1 red pepper

1 orange or yellow pepper

1 tbsp olive oil

1 tbsp garlic purée

fresh mint leaves, to garnish



chopped avocado

soured cream

lime halves 

1. Preheat the oven to 200°C/400°F/Gas Mark 6, wrap the tortillas in foil and place in the oven to warm. Combine the chilli, sugar, salt, cumin, oregano and garlic powder in a small bowl.

2. Slice the pork into 5-mm/1/4-inch thick rounds, then cut the rounds into 1-cm/.-inch wide strips. Dice the bacon. Put the pork and bacon into a large bowl with the spice mixture and toss. Slice the onion, red pepper and orange pepper into 1-cm/1/2-inch wide strips.

3. Heat the oil in a large frying pan over a medium–high heat. Add the pork and bacon and cook, stirring, for 4–5 minutes until the meat is brown. Transfer to a plate. Add the onion, garlic purée and peppers to the pan and cook for about 4 minutes until the vegetables begin to soften. Return the meat to the pan and fry until cooked through.

4. Garnish with fresh mint leaves and serve immediately with the warmed tortillas, salsa, avocado, soured cream and lime halves.
